- 2 cups baby spinach
- 3 ounces cooked salmon
- 1 hard-boiled egg, peeled and chopped
- ¼ cup cucumber, chopped ¼ cup tomato, diced
- 1 tablespoon extra- virgin olive oil
- 2 teaspoons lemon juice
- ½ teaspoon kosher salt
- Black pepper, to taste
- Spread spinach on a plate and top with the salmon, egg, cucumber, and tomato. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper. Pour over salad and toss to combine.
