Spinach and Salmon Salad

Ingredients

  • 2 cups baby spinach
  • 3 ounces cooked salmon
  • 1 hard-boiled egg, peeled and chopped
  • ¼ cup cucumber, chopped ¼ cup tomato, diced
  • 1 tablespoon extra- virgin olive oil
  • 2 teaspoons lemon juice
  • ½ teaspoon kosher salt
  • Black pepper, to taste

 

Instructions

  • Spread spinach on a plate and top with the salmon, egg, cucumber, and tomato. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper. Pour over salad and toss to combine.
