Stuffed Pepper Soup

Ingredients

  • 1 pound lean ground turkey (93% lean)
  • 1 medium onion, chopped
  • 2 medium green peppers, chopped
  • 2 cups cooked brown rice or 1 package (8.8 ounces) ready-to-serve brown rice
  • 1 teaspoon Italian seasoning
  • 2 cans (15 ounces each) tomato sauce
  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 1 carton (32 ounces) low-sodium beef broth

Instructions

  1. Cook turkey in a skillet until evenly brown. Stir in onion, and cook until tender.
  2. Transfer turkey to a slow cooker and add remaining ingredients.
  3. Cook, covered, on low for 5-6 hours.

Yields: 12 servings
