Sweet Potato, Chickpea, and Lentil Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 can chickpeas (drained)
  • 1 onion (finely diced)
  • 3 garlic cloves (minced)
  • 2 teaspoon ginger
  • 1 teaspoon Salt
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 can fire roasted tomatoes
  • 2 large sweet potatoes (peeled and cut into small cubes)
  • 1 can lentils (drained and rinsed)
  • 5 cups low sodium vegetable broth 
  • Lemon juice to taste
  • Cilantro (finely chopped)


Toppings:

  • Sunflower seeds
  • Pumpkin seeds
  • Pepper
  • Red pepper flakes
  • Cilantro


Instructions

  1. Heat oil and add onion, garlic, and ginger (cook for about 5 minutes)
  2. Add spices, fire roasted tomatoes, sweet potatoes, lentils, chickpeas, and broth. Stir. 
  3. Add lemon juice and chopped cilantro.
  4. Simmer for 25-30 minutes.
  5. Add toppings and enjoy!
