Cowboy caviar

With two types of beans, this dish is packed with fiber! It can be served with chips like a salsa or topped on salad greens for a light yet satisfying meal.

Ingredients

  • 1 (16) ounce can black beans drained and rinsed
  • 1 (16) ounce can great northern beans or black-eyed peas
  • 2 large tomatoes seeded and diced
  • 1/4 cup red onion finely chopped
  • 2 medium green peppers , diced
  • 1 clove garlic minced
  • 1 tablespoon vinegar
  • 1 tablespoon lime juice
  • 2 teaspoons granulated sugar
  • 3 tablespoons extra virgin olive oil

Instructions

  • Combine the beans, tomatoes, onion, peppers, and garlic in a large bowl.
  • For the dressing, combine the vinegar, sugar, olive oil, and lime juice in a small bowl and whisk until sugar is dissolved. Pour vinegar mixture over the bean mixture. Cover and refrigerate for at least 2 hours. Serve with tortilla chips or on top of a bed of lettuce.
