Pear Salad

Holiday Salad

This beautiful salad is the perfect addition to any party or holiday menu.

Ingredients

For the salad:

  • 3 medium pears, sliced
  • 2 tablespoons lemon juice
  • 16 ounces salad greens
  • Seeds from 1 large pomegranate
  • 8 ounces Brie, sliced and cut into 1- inch pieces
  • 1 1/2 cups pecan halves, toasted**

For the dressing:

  • 2/3 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • ground black pepper, to taste

Instructions

  1. Cut the pear slices and place them in a large plastic bag and squeeze lemon juice over them. Gently shake the bag to coat. In a large salad bowl, combine salad greens, pears, pomegranate seeds, Brie and toasted pecans. Right before serving, drizzle with dressing and toss until ingredients are coated.
  2. To prepare the dressing, measure all of the ingredients into a bowl or jar with a tight lid. Shake until everything is thoroughly mixed.
  3. To toast pecans, preheat the oven to 350 degrees. Spread pecans on baking sheet and bake for 8 to 10 minutes, stirring every 2-3 minutes in between. Allow to cool before adding to the salad.
