Slow Cooker Quinoa Chili

Quinoa Chili

This meatless chili is packed with protein and fiber making it a hearty and satisfying dish.

Ingredients

  •  2 (14.5 ounce) cans of diced tomatoes
  •  2 (15 ounce) can of black beans, rinsed and drained
  •  2 (15 ounce) can of pinto beans, rinsed and drained
  • 2 cups frozen corn
  •  3 cups vegetable broth
  •  1 cup of quinoa, rinsed
  •  2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 teaspoons cumin
  • 1/2 teaspoon red pepper flakes
  •  2 teaspoons chili powder

Instructions

  • Combine all of the ingredients in a slow cooker. Cook on low for 8 hours or high for 4 hours.
  • Optional: Serve topped with your favorite accompaniments such as:
    • Shredded cheese (Daiya cheese is one vegan option)
    •  Guacamole
    •  Sour cream
    •  Green olives
    •  Jalapeno peppers
    •  Tortilla chips
