Spring into Healthy Eating
with Spring Vegetables
With warmer weather comes seasonal produce, specifically vegetables. Whether you shop at your local Farmer’s Market or grow your own, there are a wide variety of nutritious and tasty vegetables during this season. Here is a list of common vegetables to be on the look out for or try to grow your own this spring:
- Spinach, Kale, lettuce and other greens
- Green onions
- Radish
- Snap peas
- Broccoli
- Green Beans
- Cabbage
- Asparagus
- Kohlrabi
Unsure how to prepare and cook these vegetables? Below is a list of easy ways to enjoy these healthy veggies:
- Sautee asparagus in a pan with a little olive oil, pepper and lemon juice for about 10 minutes or until tender. Sprinkle with parmesan cheese.
- Roast a variety of vegetables such as broccoli, green beans, cabbage and asparagus. Cut into bite sized pieces and spread out evenly on a sheet pan. Sprinkle with a little olive oil, onion and garlic powder, paprika, pepper and Italian seasoning. Stir to coat evenly. Bake at 400˚F for about 15-20 minutes, or until tender.
- Get creative with a fresh salad of mixed spinach, lettuce, and kale. Top with sliced radish, snap peas, sliced almonds and carrots. Sprinkle with you’re a balsamic vinaigrette or your favorite dressing.
- Make a veggie omelet or scrambled eggs with green beans, asparagus, and spinach. Top with a sprinkle of your favorite low-fat cheese.
